Server and Client Operating Systems

Oddly enough, I think the general client/server pattern is disappearing to a true peer to peer model, where each computer becomes a server to other others and is a client to others.

I think that is true in a general sense. However there are some systems that are obviously targeted to perform well as servers and others to excel as a client. Not that they can’t switch roles, just that they serve best in one or the other, but not usually both.
